For this recipe you will need the following ingredients:
- Smoked Haddock, 8 ounces
- Salmon Fillet, 8 ounces
- Bay leaves, 1
- Peppercorn, 4
- Skim milk, 6 ounces
- Prawns, 4.50 ounces
- Low fat soft cheese, 7 ounces
- Low fat fro-mage fraise, 4.50 ounces
- Curly leaf parsley, 2 ounces, fresh
- Leeks, 1 small
- Potato, 700 grams
- Coarse grain mustard, .50 tablespoon
Preparation of this healthy fish pie recipe may seem to take a bit longer than others, but the time is well worth the benefits of a meal that will be great tasting and good for you. First off you will need to turn the oven on so it can preheat, set it to 350 degrees Fahrenheit. Place your salmon and haddock inside of a smaller roasting tin, along with the peppercorns, milk and bay leaf. For the milk pour enough on to cover the fish about half way up. Cover this tightly and cook in your oven for around 10 minutes, enough time for the fish to begin to flake.
Strain your milk into a jug to save for later, and break those pieces of fish up into medium sized pieces, and place them inside of a baking dish. Discard your peppercorns and bay leaf at this time as well. Scatter those prawn pieces on top of your fish.
Mix 100 milliliters of reserved milk, fro-mage fraise and soft cheese. Add in some parsley and season to the taste you enjoy. Pour this mixture over the fish and prawns in your 2 pint baking dish. Cook the leek in a pan of water for around 5 minutes, it should be soft when done, drain water.
In another pan you should cook your potatoes until they are tender, around 20 minutes. Once they are done, use your milk from the fish that you cooked at first and mash the potatoes up. Add in the leek to the potato and season with salt and pepper if you choose too.
Place the mixture of leek and mash potato on top of your fish and prawn mixture. Spread it out evenly and place inside of the oven for around 25 minutes. Once the mixture is bubbling place it under the grill and let the mash brown up, this should be about 5 minutes to do.
Once that step is completed you can now take the fish pie out of the oven and serve it to your family. This is a great meal that will not seem too healthy to scare the kids away from eating it.
